Lasagna

1 and 1/2 lbs lean ground beef
1/2 lb Italian sausage
1 large onion, chopped
2 garlic cloves, minced
1 tsp salt
1 tbs parsley
1 tbs oregano
1 tbs basil
2 (14 oz) cans chopped tomatoes, undrained
2 (6 oz) cans tomato paste
24 oz cottage cheese
2 eggs, beaten
1/2 tsp pepper
2 tbs parsley
1/2 cup Parmesan
4 cups shredded mozzarella, divided
12-15 lasagna noodles

1. Brown beef and sausage with onion and garlic.
2. Add salt and next 5 ingredients; stirring until mixed. Simmer 1 hour.
3. Cook noodles, drain and set aside.
4. In a large bowl, combine cottage cheese, eggs, pepper, 2 tbs parsley, Parmesan and 2 cups mozzarella.
5. In lasagna pan, layer noodles, meat sauce, and cheese mixture. Top off with layer of noodles and top with remaining mozzarella.
6. Bake at 375 degrees for 30-40 minutes or until cheese is bubbly on top.
