Macaroni & Cheese

This comes from Kevin's Mom's kitchen.


1 (8 oz) pkg elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1 tsp salt
2 cups cheddar cheese, shredded
1 egg, beaten
paprika

1. Cook macaroni according to package directions, drain well, and set aside.
2. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.
3. Gradually add milk; cook over medium heat, stirring constantly until thickened and bubbly.
4. Stir in salt and cheese, stirring until cheese melts.
5. Gradually stir about 1/4 hot cheese mixture into egg; then add to remaining hot mixture, stirring constantly.
6. Stir cheese sauce into macaroni; pour into lightly greased 2 qt baking dish. Sprinkle with paprika.
7. Bake at 350 degrees for 35 minutes.

Makes 4-6 servings.
