This is the only way I'll eat cooked spinach. I could eat my weight in this! We first had this at our favorite local steakhouse, Shapley's. I found a recipe that I thought was similar to Shapley's and have tweaked it to make it my own. Enjoy!
*Note: The best gruyere cheese is made by Emmi and is called Le Gruyere Reserve (it MUST say Reserve on the cheese wheel). If you buy this from Kroger, it will say "cave aged" on the label. There is another Le Gruyere by Emmi that is sold pre-packaged, but it is very hard and waxy and not nearly as good.
2 tbs unsalted butter
1 chopped medium yellow onion
1/4 cup flour
1/4 tsp grated nutmeg
3/4 cup heavy cream
3/4 cup milk
2 (10 oz) packages frozen chopped spinach, thawed
1/2 cup grated Parmesan
1 tsp kosher salt
1/2 tsp fresh ground pepper
1 cup grated Gruyere cheese
1. Preheat oven to 425 degrees.
2. Melt butter and saute onions 10-15 min. Let the onions start to caramelize.
3. Add flour and nutmeg; stir for 1 min.
4. Add cream and milk; cook until thickened.
5. Add salt and pepper.
6. Squeeze water from spinach and add to sauce.
7. Add Parmesan cheese and stir to mix.
8. Transfer to baking dish and top with Gruyere.
9. Bake for 20 min.
