Roasted Green Beans

Serves 4-6

2 lbs green beans, whole
1-2 tbs olive oil (or just enough to lightly coat beans)
1 tsp kosher salt
1/2 tsp fresh ground pepper

1. Preheat oven to 400 degrees.
2. Wash, dry, and trim green beans.
3. Put green beans on a jelly roll pan.
4. Drizzle with olive oil.
5. Sprinkle with salt and pepper to taste.
6. Use your hands to make sure all the beans are evenly coated and spread them out into one layer.
7. Roast for 20-25 minutes, turning after 15 minutes, until beans are fairly brown in spots and somewhat shriveled.
8. Serve hot or at room temperature.
